Nick here. Thanks for checking out 0212eat. We’ve reached the part of the site where you read about all the cool places I’ve worked and all the amazing chefs I’ve had the privilege of working under. Let’s be honest, writing about yourself is Humblebrag City. But the thing is, I really have been lucky during my 16 year culinary career.
I’ve worked for talented local chefs Pino Maffeo and Tony Susi during my formative years as a line cook. They, along with my mentor chef Phet Schwader, set the tone for the rest of my career. I’ve lived in Italy, cooking in a small ristorante in Florence (for basically no money, I might add). I’ve honed my craft in the big leagues under the Batali/Bastianich brand, starting at B&B Ristorante in Las Vegas and ending with Babbo Pizzeria e Enoteca, and Eataly, both here in Boston. Last but not least, I was the Chef de Cuisine at the historic Langham Boston hotel, where James Beard Dinners were an annual event. As I mentioned before, these are some pretty cool places that all have stories to tell but ain’t nobody got time for that.
Bottom line, I love what I do. I love cooking delicious food. I love the beauty and simplicity of the Italian kitchen. I love meeting people and talking to them about food. I love feeding people. At the end of the day, food that is cooked with thought and care then plated with a little love is what it’s all about. After all, eating should be fun!
